Red Curry Moose – Guest Post

Today’s guest post is from 26 North Productions, a company started by Jim Corcoran in 2014. 26 North began with the goal of showcasing Maine’s natural beauty, but has since grown to other states and even other countries. Check them out online here and on instagram at @26northproductions.

To be perfectly honest, I don’t know a ton about moose hunting in Maine. Everything I’ve ever read or heard about hunting in Maine sounded incredible, and 26 North’s photos back that up. What an experience to take a moose. Here in Colorado that tag runs $250 for a resident and a staggering $2150 for non-residents. Maybe someday.

Here’s Jim’s recipe for Red Curry Moose–with a little northeastern flair.

Red Curry Moose

Ingredients:

1lb moose cut into 1 inch cubes
3 tablespoons peanut oil
1 onion sliced
2 garlic cloves chopped
3 1/2 tablespoons red curry paste
2⁄3 cup milk
1 tablespoon maple syrup
1⁄2 cup beef stock
1 tablespoon fish sauce
2 tablespoons lime juice
2 tablespoons fresh chopped basil
3 cups rice

Instructions:

Add moose, oil, onion, and garlic and cook moose until browned.

Add curry, milk, maple syrup and cook 10-15 minutes on medium high

Add beef stock, fish sauce, lime juice, and basil, simmer for another 10-15 minutes.

Serve over rice
